We are thrilled to announce that Aulis Phuket has been awarded its first Michelin Star, less than a year after its opening.

The menu at our intimate 15-seat chef’s table reflects our dedication to the local surroundings and native produce in Thailand. Our dining experience fully immerses guests into the Simon Rogan philosophy, centred on a deep respect for seasonality and locality. Since opening our doors in December last year, we set out to create an extension of Simon’s principles, mastered at three Michelin-starred L’Enclume in Cartmel, UK.

This would have been impossible without our incredible team—Oli, Charlie, Kenika and Arsen—who have embodied Simon’s ethos in every way. Facing each opportunity and challenge with creativity, energy, smiles, and tireless effort here on the shores of Natai.

To the local growers and partners we’ve been fortunate to work with – like Family Farm in Paklok, Rai Na Rak, and all the producers we use across Thailand – we thank you for being such a vital part of our story.
