In December 2023, award-winning chef and restaurateur Simon Rogan opened Aulis Phuket, a chef’s table concept, at Iniala Beach House on Natai Beach. This unique 15-seater restaurant marks his first venture in Thailand, sitting in the Greater Phuket area.
Akin to the other Aulis chef’s tables in Cartmel, London, and Hong Kong, Aulis Phuket focuses on hyper-local ingredients, seasonality, and innovative cooking techniques in an intimate setting, offering a one-of-a-kind dining experience that embodies Simon Rogan’s farm-to-table ethos.
Cartmel to the World
The first Aulis opened in 2016 in the mediaeval village of Cartmel, adjacent to L’Enclume, Simon Rogan’s flagship restaurant. Aulis Cartmel started out a small chef’s table and development kitchen named in tribute to Aulis Lehtimaki, a Finnish chef and artist who was integral to the early success of L’Enclume.
Aulis quickly became a hub of culinary innovation whilst always maintaining a commitment to provenance and seasonality by utilising ingredients grown at Simon’s regenerative farm, Our Farm. Aulis has since evolved from an experimental kitchen to a collection of venues in Hong Kong, London and Thailand that enable guests to connect more closely to Simon Rogan’s love of the natural world and quest to showcase the very best local ingredients. Each location, from the UK to Hong Kong and now Thailand, tells a unique story through indigenous produce and innovative cooking techniques.
“It has been such a joy setting up Aulis Phuket. As our first restaurant in Thailand, we’ve been exploring new regions and experimenting with hyper-local ingredients we’ve never used before, supplied directly to us by local farmers and growers.
We aim to create an almost entirely unique experience for the 15 guests at each service, starting with a series of snacks in the lounge and finishing with petit fours at our kitchen counter. It makes for a meal to remember.”
